Chicken Curry – Boneless (gf)

Start – Ingredients End – Dish
  • 1 kg chicken thigh fillets – cut to 5 cm pieces
  • 1  medium onion – finely sliced
  • 1 medium or 2 small tomatoes – finely sliced
  • 1-2 tlsp fresh masala (garlic, ginger, chili paste)
  • 1 tlsp oil, ghee or coconut oil
  • 2 tsp coriander powder
  • 2 tsp sweet paprika
  • 1 tsp turmeric powder
  • 1 1/2 tsp salt or chicken salt to taste

Optional:

1/2 cup water, coconut water or stock

1 tlsp fresh coriander (cilantro) roots and stems –  chopped

1 tlsp turmeric roots-  grated

2 Heat oil, add onions and coriander roots and fry until the onions are transparent and soft  smitsfoodblog - chicken curry 372

4  Add chicken pieces and fry until chicken is brown

Add dry spices and tomatoes

Add water, stock or coconut water (optional)

Stir through and cover

6  Example 1

1/2 cup water was added to this dish,

For a thicker sauce do not add liquid as chicken and tomatoes releases enough moisture for a gravy

Tips to Create
Create different sauces using the above base recipe:

  • Add 2 tlsp spoons of yogurt or
  • Add spinach puree or
  • Stir though coconut cream

Add cinnamon stick and star anise with onion in step 3

Add bay, kaffir lime and or curry leaves with onions in step 3

Add capsicums in step 3

Add boiled potatoes at the end
