These are some recipes I have played with and shared with family, friends, neighbors and colleagues. Thanks to them all for being my guinea pigs!
Curries are less daunting when the basics are on hand. 3 simple secrets to creating a good curry:
- Make bulk fresh masala (garlic, ginger and chili paste) and store in the fridge.
- Keep basic spices (minimum – sweet paprika, turmeric and coriander powders) in the pantry.
- Smell the spices and use more of the ones you like best
