Spicy Lamb Mince and Vegetables (gf)

Vegetables can be varied easily, egg plant also works beautifully with this recipe.

Cooking time 20-25 min
Start – Ingredients
  • 250g lamb mince
  • 1 zucchini – diced
  • 1 small capsicum – diced
  • 1 bunch asparagus – 2 cm stalks
  • 1 medium onion – finely sliced
  • 1 tomato – diced
  • 1 tlsp tomato puree
  • 1-2 tsp fresh masala (garlic, ginger chili paste)
  • 1 tsp chili powder (optional)
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp sweet paprika
  • 1 tsp salt
  • 1 tlsp ghee/veg oil
  • water/stock (optional)

Garnish (optional)

  • Fresh coriander leaves
  • Lemon wedges

1  Assemble and prepare ingredients as above

Place fresh masala and dry spices (not salt) in a bowl and allow to marinate.

2  Place ghee in a fry pan/wok and heat, add onions an fry for 2-3 minutes  smitsfoodblog - spicy lamb mince and vegetables - fry onions

5 Add remaining vegetables, tomato paste and salt

Stir though

6 Cover and cook on medium heat until vegetables are soft, approx 10-15 min

Check occasionally and stir through.

Depending on the vegetables used:

  • a little water may be needed to keep content moist.
  • Cooking time may vary

Tips to Create
The variations for this dish is endless, with vegetables, herbs and spices, some suggestions are use:

  • Vegetables – Egg plant, beans, peas, potatoes (pre fried), sweet potatoes, carrots, fennel
  • Spices – Garam masala, Chinese five spice, coriander powder, pepper, chili powder, nigella seeds (great with egg plant and beans), cumin seeds
  • Fresh – turmeric root, coriander, curry leaves, kaffir lime leaves, lemon rind and juice
  • Meats – chicken, lamb, beef, pork, kangaroo minced, my latest trial has been wallaby and lamb mince combined during a Tasmanian holiday (they don’t have kangaroo mince in Tasmania!)
