Veg Curry – Potato and Silverbeet Stems (gf) (lf) (v)

Potatoes can be mixed with almost any vegetable using this guide and “voilà!” a new dish each time; suggested vegetable combinations with potatoes are spinach, beans, egg plant, capsicums, peas, zucchini, carrots, cauliflower, asparagus, mushrooms……

This guide uses sliverbeet stems that may otherwise go to waste.

Serves 4 Preparation time 15 min
Cooking time 20-25 min
Start – Ingredients
  • 1/2 kg potatoes – 1 cm cubed
  • I medium onion – finely diced or sliced
  • 250g silverbeet stems – diced
  • 1 tsp black mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp cumin powder
  • 1/2 tsp turmeric powder (1 tsp if fresh turmeric is not used)
  • 1/2 tsp salt
  • 1-2 tlsp oil/ghee

Optional

  • chili –  flakes or fresh
  • 1 tsp grated fresh turmeric root

1 Assemble and prepare ingredients

Wash and cut silverbeet stems from leaf, use the tender part of the silverbeet stem

2 Prepared sliverbeet stems and potatoes

Optional

Add silverbeet leaves

3  In a heavy based fry pan, wok or saucepan, melt the ghee/oil over a high heat

Add black mustard seeds, place on the lid and quickly sauté until they crackle, remove from the heat

Add cumin seeds and fry for 1 min,

Place pan back on a medium heat.

4  Add the onions and fry until they are translucent

Add remaining spices and ingredients and fry for 2 minutes

6 Turn the heat on low, place a lid on the pan and cook for 20-25 minutes until the vegetables are soft

Stir occasionally

Tips to Create
To speed up the cooking time – use cooked potatoes, boil or fried

Oven bake potato wedges and follow the recipe

Try these recipe with roasted pumpkin, carrots or sweet potatoes.

Add 2 tlsp of coconut shreds at the end.

Mustard and cumin seeds seeds go well with potatoes, if making a veg curry without potatoes you may leave them out.
