The use of cured meats adds a layer of salty, hot, smoky and crispy flavors to the vegetable.

Proportions are not important, these are unlimited variations to this dish.

Start – Ingredients
  • broccoli – small florets
  • beans
  • asparagus
  • cured meat – salami, pepperoni, prosciutto – strips
  • goats cheese
  • olive oil
  • garlic or onion salt

Optional

  • pepper – freshly grated
  • chili flakes

1 Assemble and prepare ingredients

Cover an oven tray with baking paper, lightly spray with oil

layer the ingredients and place meat strips son top

sprinkle with salt, chili flakes and pepper

3 Place in a serving dish, top with goats cheese and dress with olive oil

Tips to Create
Vegetarian version without the meat

Dress with olive oil, lemon juice and finely grated lemon rind

Sprinkle with;  pine nuts, flaked almonds, walnuts

Dress with mayonnaise instead of goats cheese

Serve on a bed of fresh spinach leaves

Add other roasting vegetables – carrots, potatoes, fennel, cauliflower, onions, pumpkin, sweet potatoes
