Mango Salad (gf) (lf)

Use ripe, semi ripe or raw mangoes to vary the sweetness.

  • 1-2 fresh mango – peeled and finely sliced
  • 1/4 cabbage
  • 1 large carrot – grated or julienne
  • 1 large zucchini – grated or julienne
  • 1 large red capsicum – julienne

1-2 cups fresh herbs

  • spring onions
  • coriander leaves
  • Thai basil

Dressing – proportions

  • 1 tlsp lemon juice
  • 1 tlsp fish sauce
  • 1 tlsp coconut nectar (or honey)
  • 1 tsp sesame oil
  • 1-3 fresh red hot chilies – chopped

2  Mango Preparations

  1. peel mango
  2. slice into thin vertical rows from top to the seed
  3. cut sideways into thin cheeks to create straws

Note:

if the mango is large cut multiple cheeks on each sides in step 3

3 Gently toss together vegetables and herbs but not the mango;

4 Assemble ingredients in a serving dish:

  1. salad on the bottom (bar mango)
  2. lay mango strips on top
  3. garnish with fresh herbs

5  Dressing

Mix together all dressing ingredients and stir

Taste and adjust ingredients

Tips to Create
The mango, fresh herbs and the dressing are the stars in this salad.

The salad ingredients can be adjusted to taste, some suggestions are: use fresh lettuce, rocket, Chinese cabbage, fennel, snow peas, snow pea shoots and leaves, lentil sprouts,

Add Vietnamese mint, lemon balm, sweet basil, parsley

sprinkle with roasted shallots, dried chilli flakes, pomegranate seeds, almond flakes or sesame seeds

Make it into a meal by adding glass noodles – rice for a gluten free option or add mung bean noodles for a carb free option
