Zucchini and Carrot Slice This is very much like a savory cake. The recipe is very easy and basic, there are a choice of zillion ingredients that can be added to make your personalized version – cheese, bacon, herbs, nuts etc

Or dare to convert it to a tea cake and replace vegetables and pepper with grated apples walnuts and sugar.

Serves 6 Preparation time 10 min
Oven temp 180°C Cooking time 30-35 min
Start – Ingredients
  • 1 zucchini (courgettes) – small grated
  • 1 carrot – small grated
  • 3 eggs
  • 3/4 cup yogurt (low fat)
  • 1.5 cup  self raising flour
  • 1 tsp salt
  • 1 tsp pepper

Oven

Pre heat oven to 180°C

3 Line a 20 cm (8″) baking tray with baking paper

Spray paper with oil spray to prevent sticking

Scoop mixture in the tray and create a slight indent in the middle by pushing the mix towards the sides

Bake for 30-35 minutes at 180°C

Tips to Create
  • Add ham or bacon – finely diced
  • Add grated cheese
  • Add crumbled feta cheese
  • Use wholemeal flour for added fiber
  • Replace half a cup of flour with oats, oat bran or wheat bran for added fiber
  • Add sun-dried tomatoes, nuts and olives
  • Use dry herbs – oregano, thyme, chili flakes
  • Use fresh herbs – parsley, basil, oregano, thyme, dill, spring onions
  • Keep the mixture soft but firm
  • Change it completely and make a tea cake – replace vegetables and pepper with grated apples walnuts and sugar.
